The point of polls is to have an ANONYMOUS vote... If you want known votes then just have people type out their vote and/or reasoning in a normal post.

And if you have the option at the point of poll creation to offer the choice of visibility... There is no problem here. I did this for Wedge and I see no problems with it.

yes... the information is "tracked" in the same sort of way that PMs are tracked...
